Easter nests

Ingredients

  • 400g potatoes
  • 100g grated cheese (Gruyère, Comté, Cheddar, etc.)
  • 1 egg
  • 1 tbsp finely chopped herbs (parsley, chives, etc.)
  • 8 small eggs
  • salt, pepper

Preparation

  1. Preheat the oven to 180°C (fan oven).
  2. Peel and grate the potatoes.
  3. Squeeze the potatoes with your hands to remove as much water as possible. In a mixing bowl, mix the grated potatoes, grated cheese, one egg, herbs, salt and pepper thoroughly.
  4. Divide the mixture between muffin tins, shaping it into nests (covering the base and sides of the tin, without pressing down too firmly).
  5. Bake for about 20 minutes until the nests are golden brown.
  6. Crack an egg on top (if your eggs are too large, do not pour in all the white).
  7. Return to the oven for a further 10 to 12 minutes until the egg white is fully cooked.
