Easter nests

Ingredients
- 400g potatoes
- 100g grated cheese (Gruyère, Comté, Cheddar, etc.)
- 1 egg
- 1 tbsp finely chopped herbs (parsley, chives, etc.)
- 8 small eggs
- salt, pepper
Preparation
- Preheat the oven to 180°C (fan oven).
- Peel and grate the potatoes.
- Squeeze the potatoes with your hands to remove as much water as possible. In a mixing bowl, mix the grated potatoes, grated cheese, one egg, herbs, salt and pepper thoroughly.
- Divide the mixture between muffin tins, shaping it into nests (covering the base and sides of the tin, without pressing down too firmly).
- Bake for about 20 minutes until the nests are golden brown.
- Crack an egg on top (if your eggs are too large, do not pour in all the white).
- Return to the oven for a further 10 to 12 minutes until the egg white is fully cooked.
