    Lemon balm has a deliciously lemony, slightly sweet and refreshing flavor. 

    It is often used to make soothing, relaxing infusions. Simply add fresh or dried lemon balm leaves to hot water and steep for a few minutes.

     Lemon balm is an excellent addition to desserts such as sorbets, fruit salads, jams and pastries. Its lemony notes go well with sweetness.

    Lemon balm can be harvested throughout the growing season, but is generally most aromatic just before flowering. You can start harvesting the leaves when the plant is sufficiently developed.

    To harvest lemon balm, pick the leaves using garden shears or by gently pinching them close to the stem. You can harvest the leaves as you need them, or cut whole stems.
