The green shiso is characterized by a sustained flavor mixing notes of basil, pepper, lemon balm and cinnamon. A traditional accompaniment to sushi, green shiso is widespread in Japan. Shiso is a real taste experience, with its mint-like flavor and hints of cinnamon and cumin.

How do you cook green shiso?

Green shiso is used in many Asian dishes for its distinctive flavor and fresh, herbaceous aromas. The leaves are traditionally used for sushi, sashimi, soba (buckwheat noodles) and tempura. They can also be added to salads and soups. Shiso also goes well with fish. In Japan, it is used as a condiment sprinkled over rice, and is delicious in spring rolls.

To avoid losing flavor, add the leaves at the end of cooking so that they coat the other ingredients with their fragrance.

Our tips for successfully growing your green shiso

Green shiso can be harvested as it grows. You can start harvesting the leaves when the plant reaches a height of around 15 to 20 centimetres. Use clean scissors to cut the leaves at the base of the plant. You can also remove young shoots to encourage denser plant growth. Use the leaves immediately.
