    Komatsuna is a leaf vegetable very popular in Japanese cuisine. This plant has thick leaves and stems. The young leaves of Komatsuma are tender to sweet taste, they can be harvested as and when needed. The mature leaves are the largest, they are similar to Swiss chard or pear. The leaves are very rich in calcium and minerals. They are eaten raw in salads or cooked like spinach.

    How do you cook komatsuna?

    Komatsuna can be eaten raw or cooked. It is delicious in salads, woks with garlic or in soup. Its leaves have a crunchy texture and a slightly spicy flavor that goes well with other ingredients. You can also use the firmer komatsuna stems, cutting them into pieces and adding them to cooked dishes. 

    It can also be pickled or fermented for more complex preparations.

    Komatsuna can be harvested when the leaves are young and tender. You can trim the outer leaves by cutting them off near the base of the plant with scissors. Komatsuna is a fast-growing plant, so you can harvest the leaves as you need them, letting the plant continue to grow.
